Fried egg salad with honey mustard dressing

Why should boiled eggs have all the fun? Eggs fried in extra virgin olive oil make for a great centrepiece in this simple salad.

Ingredients

  • 4 tbsp extra virgin olive oil

  • 3 free-range eggs

  • 1 head butter lettuce, washed

  • 1 tomato, cut into wedges

  • ¼ red onion, very thinly sliced

  • freshly grated parmesan, to serve

For the dressing

  • 1 tsp Dijon mustard

  • 2 tbsp whole-egg mayonnaise

  • ¼ tsp honey

  • juice of ½ lemon

  • 1 tbsp white wine vinegar

  • salt and black pepper, to season

Method

  1. Step 1

    Heat a medium frying pan over medium heat and add the oil. Fry the eggs for about 3 minutes, spooning the hot oil over them to cook the top. Transfer the eggs to a plate and drain on a paper towel.

  2. Step 2

    Combine the mustard, mayonnaise, honey, lemon juice and vinegar in a jug, then add the oil from the pan. Mix and season with salt and pepper.

  3. Step 3

    Pour the dressing over the lettuce, tomato and onion and toss to combine. Arrange the salad on a plate and top with the eggs. Season with salt and pepper, grate plenty of parmesan over the top, and serve.
